Representative Hiromi Nakamura (Olive Oil Planner)

A Story That Began with a Teaspoon of Olive Oil

Hiromi_ProfileUnder the Olive Tree

When I first drank olive oil,

it felt strange.
It was something that couldn't be expressed in words like delicious,
having a scent, or having a taste—

an indescribable sensation.

Despite the smooth mouthfeel of the oil I drank for the first time,

it came with spiciness and bitterness, and various aromas

appeared one after another, and after disappearing down the back of my throat,
a pleasant coolness remained.

What was this!? It was fascinating!!

I'm sure that was the moment I opened the door to olive oil.

Obtained olive oil certification in Tuscany, Italy, in 2009 (Italian AISO certification).
Completed the full course and passed the final exam,
but even though I obtained the certification,

I hated that I only had a vague understanding,

so I retook the same course from the beginning with a different organization.

The more I learned, the deeper it went, and I took another olive oil course from the beginning with a different organization in several places after that. During that time, I visited various olive farms in Italy and Spain for study,

visited fields and factories,
repeated tastings,

and now I even visit olive oil research institutes.

Many facts that contradicted what I had learned from textbooks, as well as new truths, emerged, and I became even more passionate about olive oil.

I received more and more olive-related work in Japan,

and when I imported a small amount of oil because it became necessary for work,

the number of oil buyers increased unexpectedly,
and while increasing the import volume and the number of oils handled year by year,

in 2019, the seventh year since I started importing,

I adopted the name olive BIO Japan.
February 2021: Established Olive Oil Stories Co., Ltd.

If You Want to Make Delicious Pasta Dough Cover

A new book by popular Italian food researcher Hiromi Nakamura, whose previous book, "If You Want to Make Delicious Pizza Dough (Enhanced and Revised Edition) 33+14," is currently on sale and highly acclaimed.
This time, the focus is on "delicious pasta dough."
It introduces 20 types of short pasta and hand-stretched long pasta that can be made without a pasta machine.
All the sauces use ingredients that are easy to make at home, with a total of 32 recipes. Like the pizza book, books on pasta dough that can be made at home are rarely seen, but this book conceives dough that is easy to make even in Japan's small kitchens.
The dough-making and shaping are explained in detail with photographic processes.

Enhanced and Revised Edition If You Want to Make Delicious Pizza Dough 33+14 Cover

A pizza recipe collection that adds new recipes to the previous "If You Want to Make Delicious Pizza Dough" and allows authentic "delicious pizza dough" to be reproduced at home.

The sections are pizza with wheat dough, pizza with rice flour dough, and dessert pizza, in three sections.
It introduces methods of baking on a grill, which is close to the state of baking in a kiln, baking in a home oven, and methods that anyone can enjoy.
It is packed with stylish pizzas that are great for entertaining.
The enhanced and revised edition includes 14 new wheat dough recipes. Each is a variation of pizza that can be made with a "60g ball" explained with basic processes.

I published a pizza cookbook in 2011, and published its enhanced edition this March!
With ingredients that are easy to find in Japan, unlike abroad
in the small kitchens of Japanese people,
while keeping the spirit I learned in Italy intact,
this is a book I was able to make with the theme of "Making Pizza with a Focus on Dough!!"
I made it with all my heart!!
If you like, please pick it up.
You can buy it at bookstores nationwide and on Amazon.
